Raw cocoa powder is extracted from unroasted cocoa beans (Theobroma cacao). In Central and South America, cocoa beans have been highly valued for centruries. The Aztecs even used them as a mean of payment  and many Mayans feasts and rituals were associated with celebration of cocoa beans as a "food of the gods". In the production process, cocoa beans are gently ground at the low temperature in order to preserve their original nutritional substances and aroma. Arriba cocoa beans , the raw material for extracting our cocoa powder, count among the most precious species grown solely in Ecuador. They are noted for their extraordinary taste with a prevailing tropical fruits flavour with tones of blosooming flowers. The raw cocoa powder is a rich source of antioxidants, iron and magnesium.
